Abstract
The species Amaranthus cruentus L., popularly known as amaranth, became the focus of research, taking off its food quality. Many researchers have worked hard to increase amaranth production and consumption to mitigate the effects of malnutrition in poor countries like Africa. Studies in Kenya have shown the potential of amaranth when used to complement fragile groups, especially in children.Studies do not show the potential of amaranth when used as a complement to marginal groups, especially in children. In Brazil, its use has grown in recent years. Both the grains and the leaf have an extremely high value in nutritional value. As it reduces levels of bad cholesterol, it is considered a functional food, which can be incorporated into several diets. Its consumption can be made in different ways, both in-natura and processed (flour, flakes). Its leaves can be eaten as vegetables, the grains as cereals. They can be used in various preparations, such as: breads, salad dressings, biscuits, cakes, drinks, among other ways, their grains being used in baking and in the diet of vegetarians. A. cruentus BRS Alegria, the first recommendation for the cultivation of grains in Brazil, developed by Embrapa, with the objective of meeting the growing domestic demand. Meanwhile, there is a shortage of cultivars available to farmers and research information about their cultivation. This work aims to analyze the physiological quality of seeds of five amaranth genotypes, BRS Alegria, Hopi Red Dye, Rabo de Gato, UEG 01 and UEG 02 produced in pots in the field. According to analyzes carried out at the Multidisciplinary Laboratory II of the State University of Goiás, Ipameri-GO campus and Semente Laboratory of the IFG - Campus Rio Verde. The following analyzes were performed: Water Content (TA), Germination Test (G), Accelerated Growth Test (EA), Germination Speed Index (IVG), Weight of 1000 seeds (P1000), Electrical Conductivity (CE) , Seedling Length (CP) and Potassium Leaching (LK). BRS Alegria showed greater vigor when cultivated in the field. UEG 02, when produced in glass, showed the results for the various analyzed.
