Abstract

The caja-manga is considered a fruit with exotic taste with nutritional qualities, which is highlighted in the regional market. However, as in fruits, caja-manga needs techniques for preserving their sensory and post-harvest qualities. Therefore, the aim of this study was to evaluate the caja-manga postharvest characteristics under different packaging and ultraviolet irradiation times C (UVC), checking the quality variables: physical, physico-chemical and bioactive. The samples were extracted from the fruits Farm and Winery Jabuticabal and analyzes were performed at the University Unit Exact Sciences and Technology of UEG. The work was divided in two experiments in completely randomized design and repetitions in triplicate. In the first experiment 5x8 factorial design was used, with UVC irradiation times (0, 1, 2, 3 and 4 minutes) and test days (0, 3, 6, 9, 12, 15, 18 and 21 days), respectively and in the second experiment was a factorial 5x8, with different packaging with 2 minutes UVC radiation (PP, LDPE, PVC + EPS, PET and unpackaged) and days of analysis (0, 3, 6, 9, 12, 15, 18 to 21 days), respectively. First, fashioned into a prototype ultraviolet irradiation (254 m) for experiments. In both experiments were evaluated: weight loss, firmness, hydrogen potential (pH), soluble solids, titratable acidity, maturation index, color (a, b, L, ºHue and chroma), carotenoids, chlorophyll a, b and total, aroma, texture, flavor and acceptability. The data derived from the analysis of the fruits of experiment 1 were subjected to regression analysis and the experiment 2 in analysis of variance (P <0.05), and when significant was done mean comparison Tukey test at 5% probability . On the basis of the results, it is concluded that the time allowed for 2 minutes maintaining the desirable characteristics of post-harvest, allowing the fruit preserve, for a longer period, the physical, physico-chemical and bioactive greater stability, as well as presenting longer life time, being used for the experiment 2. With the same performance, packaging LDPE, obtained beneficial interaction of the packaging with modified atmosphere, in maintaining proper postharvest quality, potential showing up for packaging fruit caja-manga. It also showed that the time of 3 minutes and the PVC + EPS packaging, stood out in maintaining fruit quality caja-manga, but with minor restrictions in some variables.
