Abstract
The high perishability of jabuticaba and the major bottleneck of your marketing. Therefore, the aim of this study was to evaluate the efficiency of different exposure times to irradiation UV-C and different concentrations of CaCl2 in post-harvest jabuticaba Conservation, checking the maintenance of physical variables, physical chemistry and bioactive. The search took place at the State University of Goiás - Campus of Exact Sciences and Technology in Anápolis - Goiás, Brazil. The fruits harvested were used in Farm and Winery Jaboticabal in New Fatima, District Hidrolândia - GO. The fruits harvested at full maturity stage. It was done two experiments, The Two completely randomized hum in a 5x5 factorial arrangement. And in the first (Radiation Exposure Time UV-C x Analysis of Days), testing 0 minute to UV-C, 2 minute to UV-C, 4 minutes UV-C, 6 minutes UV-C and 8 minutes UV-C. The second (Analysis Concentrations of CaCl2 x days) testing five doses CaCl2: 0% CaCl2, 1% CaCl2, 2% CaCl2, 3% CaCl2 and 4% CaCl2. Was assessed fresh weight loss, post-harvest, firmness, soluble solids storage, titratable acidity, maturation index , color ( L* , Hue and Chroma ), pH , carotenoids and chlorophyll . All conditions were performed the experiment, jabuticabas 'Sabará' irradiated with UV-C gave positive effect of 6 and 8 minutes for the carotenoids parameters , pH and soluble solids , showing maintenance for longer period of peeling pigments. Since the fruits treated with CaCl2 , increased firmness and reduction in fresh weight loss was proportional to the concentration of CaCl2 .
